Food scientists are using nanotech to improve the safety, quality, healthiness, and sustainability of foods. Nanotechnology involves manipulating materials at tiny length scales (1 to 100 nm). To get an idea of how small this is: a pea is about a million times smaller than the planet earth, and a nanoparticle is about a million times smaller than a pea!

We are using nanotechnology to create tiny food particles to encapsulate vitamins and minerals so as to increase their bioavailability. These particles are then incorporated into functional foods designed to improve human health.
