Foods are designed structures, just like the buildings around us. Foods must be designed to have a certain aesthetic (look, feel, and taste) and then assembled from building blocks (such as fats, proteins, and carbohydrates). Food architects must understand the nature of these building blocks and the forces that hold them together, so as to create foods with the desirable characteristics.
